RV Cooking Show - Hot To Make a Quick and Delicious Spinach/Pine Nut Sidedish

You Will Need

  • olive oil to coat bottom of large saute pan
  • 2-3 large cloves of garlic - chopped
  • 1 bag of pre-washed baby spinach
  • fresh ground salt and pepper to taste
  • a handful of toasted pine nuts
  • grated parmesan cheese

Step 1: Heat olive oil

Heat olive oil on medium heat in a large saute pan – can be non-stick or not.

Step 2: Add garlic

Add chopped garlic and cook until soft and fragrant – a minute or two is all it takes.

Watch the garlic carefully so you don’t burn it. If it gets brown and crisp it becomes bitter and you’ll have to start over.

Step 3: Add spinach

Add spinach a large handful at a time until all spinach is in the pan. Cook until wilted.

The spinach is done when it’s wilted but still a nice bright green.

Step 4: Add salt and pepper

Add salt and pepper to taste and stir well.

Step 5: Add pine nuts

Add toasted pine nuts and stir well.

Step 6: Serve with grated parmesan cheese

Serve with a bowl of grated parmesan cheese on the table – allowing each diner to sprinkle cheese on their portions as desired.
