That is the most nutritious part of the egg, they are excellent for digestion and brain function. They will not give you higher cholesterol nor will they make you fat. We have to get off this notion that fats make you FAT. It is how much you eat! I do not care if a box of cookies says 100% fat free, if you eat a lot of it, you will get FAT. Our problem in this country is that we take in too many wheat and grain products, the human digestive system was never meant to digest this stuff, we have not evolved fast enough for it. The pancreas was designed to digest FATS and protein, that's it. We have to think how the caveman lived, genetically we are still the same as those people.
