LAST= Look, Ask, Smell and Touch
Step 1: 1: Look
Eyes should be clear, Gills should be red
Step 2: 2: Ask
Don’t buy anything over one day old and ask if you’re unsure
Step 3: 3: Smell
The fish should have no offensive odors
Step 4: 4: Touch
The flesh should be firm and bounce back after poking it
Cook the fish within 24 hours
