This video is dangerous. Manufactures of freezer bags, such as Ziplock have issued warnings stating that their bags are not designed to be heated in this fashion. This can potentially release toxic chemicals into your food. Do not do this.

Interesting idea. I have to wonder, though: if you've got a stockpot handy, wouldn't you have a frying pan available, too?

This is so stupid! The use of plastics in cooking and food storage carries serious health risks. These ";freezer"; bags were never intended for cooking food. Just get a skillet and fry the omelette (omelet). If you have an all metal skillet, you can cook the omelette in the oven.
