Whether you make it with the traditional Italian pancetta or its American cousin, bacon, this easy-to-make dish will quickly become a dinnertime favorite.
Pour a quarter-inch of olive oil into a frying pan and add the onion, garlic, and bacon or pancetta. Cook over medium heat until the bacon is crisp — eight to12 minutes.
Add pasta to a large pot of boiling, salted water. Boil five to seven minutes.
For a healthier version, use turkey bacon and whole wheat pasta.
Whisk the eggs in a small bowl while the pasta is cooking. Add salt and pepper to taste.
Add heavy cream to the eggs for extra creaminess.
Drain the pasta and return it to the pot. Add the beaten eggs and stir until thoroughly mixed. The heat from the pasta cooks the eggs.
Add the bacon mixture to the pasta and toss.
Mix in the parmesan cheese.
Enjoy this scrumptious dish — perhaps with a glass of wine.
