You Will Need

  • Olive oil
  • 1/2 onion, chopped
  • 2 cloves garlic, minced
  • 4-6 slices thick bacon or pancetta, chopped
  • 16 oz. spaghetti
  • 2 eggs
  • Salt and pepper
  • 1 c. grated parmesan cheese
  • A large pot
  • A whisk
  • Turkey bacon
  • Whole wheat pasta
  • 1/2 c. heavy cream
  • Wine

Steps

  1. Step 1

    Cook bacon, onion, and garlic

Pour a quarter-inch of olive oil into a frying pan and add the onion, garlic, and bacon or pancetta. Cook over medium heat until the bacon is crisp -- eight to12 minutes.

  2. Step 2

    Cook pasta

Add pasta to a large pot of boiling, salted water. Boil five to seven minutes.

  3. For a healthier version, use turkey bacon and whole wheat pasta.

  4. Step 3

    Beat eggs

Whisk the eggs in a small bowl while the pasta is cooking. Add salt and pepper to taste.

  5. Add heavy cream to the eggs for extra creaminess.

  6. Step 4

    Add eggs to pasta

Drain the pasta and return it to the pot. Add the beaten eggs and stir until thoroughly mixed. The heat from the pasta cooks the eggs.

  7. Step 5

    Combine pasta and bacon mixture

Add the bacon mixture to the pasta and toss.

  8. Step 6

    Add cheese

    Mix in the parmesan cheese.

  9. Step 7

    Enjoy

Enjoy this scrumptious dish -- perhaps with a glass of wine.

  10. Did you know? The average native Italian eats 51 pounds of pasta per year.
