Indian cuisine is known for its variety and taste. Many of yuu must’ve tried or heard of the gourmet delights of Indian curries. But here is another jewel from the Indian Cuisine, the Rabri, the best Indian dessert you will ever taste. Rich, tasty and yet so easy to make.

You Will Need

  • 1 cup Milk
  • 1/2 cup Condensed Milk
  • Sugar to taste ( Keep it on the sweeter side)
  • 10-12 Pistachios (chopped)
  • 10-15 Saffron Strands
  • 3 drops Rose Essence
  • You can even experiment with other flavors like mango, or choclate etc. by adding pulp/sauce instead of Rose essence

Step 1

Heat milk in a thick bottomed pan. Once its starts to boil, leave it on medium heat till it reduces to one fourth of its original content.

Step 2

Add the condensed milk and keep stirring frequently to prevent it from sticking to the bottom.

You can even add fresh cream.

Make sure that you keep stirring to avoid the milk from burning and keep scratching the dried milk from the sides of the pan and let them boil with the milk for added taste.

Step 3

Now add sugar to the above-made recipe according to taste. Add the rose essence and remove the pan from the flame. Allow it to cool.

If you want to make a rabri with flavor other than rose, you can even add a li’l bit of mango pulp or even choclate sauce or any other flavour of your choice

Step 4

Finally garnish rabdi with chopped pistachios and saffron strands. You can even use mango slices and cashews and walnuts. Also while serving a silver or golden foil can also be used to garnish it. Keep it in a refrigerator. Not in the freezer. And allow it to chilll nice and cool

Step 5

Rabdi is ready to eat. Serve chilled
