Check out these ways to cook tofu, a delicious and healthy substitute for meat.

You Will Need

  • 1 lb. firm tofu
  • 8 oz. udon, soba, Chinese wheat noodles, or linguine
  • 1 tbsp. peanut oil
  • 2 large broccoli crowns
  • 1/2 c. Thai peanut sauce
  • Stir-fry pan or a wok
  • 2 tsp. minced garlic (optional)
  • 1/2 c. chopped green onions (optional)
  • 6 oz. baby corn (optional)

Steps

  1. Step 1

    Cut the tofu

Cut the tofu into 4-inch-thick slices and blot it well between layers of paper towels. Then cut the slices into 1/2-inch cubes.

  2. Step 2

    Cook the noodles

Cook the noodles according to the package directions and drain.

  3. Step 3

    Heat the oil

Heat the oil in a stir-fry pan or a wok. Add the tofu and stir fry it over medium-high heat until it's golden; transfer it to a plate.

  4. Step 4

    Add the broccoli

Add the broccoli with 1/4 cup water to the pan and cover it to steam until the broccoli is tender -- about five minutes.

  5. You can also use minced garlic, chopped green onions, and baby corn for added flavor.

  6. Step 5

    Add noodles and tofu

Add the noodles and tofu to the pan along with the peanut sauce and toss carefully. Cook until everything is heated through and serve.

  7. Tofu has been used in China and Japan since 164 BCE.
