You Will Need

  • 1 1/4 c. chopped cooked chicken

  • 1/4 c. sliced black olives
  • Pita bread
  • Hummus
  • 1 large sweet potato, cut into wedges
  • 1/2 jalapeno, minced
  • 2 tbsp. vegetable broth
  • 1 c. canned pinto beans
  • 1 c. reduced-fat vanilla ice cream
  • 2 1/4 c. frozen, pitted cherries
  • 1 c. nonfat milk
  • 1 tsp. vanilla extract

Steps

  1. Step 1

    Make a Greek salad with chicken

    Make a Greek salad with chicken. Whisk olive oil, 1/2 teaspoon dried oregano, 1/8 teaspoon salt, 1/8 teaspoon ground pepper, 1/2 teaspoon garlic powder, and the red wine vinegar in a salad bowl. Add the chicken, lettuce, cucumber, tomato, red onion, feta cheese, and olives and toss. Serve with pita bread and hummus.

    Make sweet potato fries

    Make sweet potato fries. Preheat your oven to 450 degrees Fahrenheit and place 2 teaspoons canola oil, 1/4 teaspoon salt, a pinch cayenne pepper, and the sweet potato wedges in a bowl and toss to coat. Then place on a baking sheet and bake for 10 minutes, turn, and bake for 10 more minutes.

    Make spiced Pinto beans

    Make spiced pinto beans. Saute a clove of chopped garlic, jalapeno, white onion, and 1/2 teaspoon chili powder in 2 teaspoons canola oil until soft. Then add the broth, beans, 1/4 teaspoon cumin, and 1/4 teaspoon salt. Mash half of the beans with a fork and simmer until heated through. Then add the cilantro and serve hot.

  4. You can substitute water for the broth.

    Make a vanilla-cherry milkshake

    Make a vanilla-cherry milkshake. Blend the ice cream, cherries, milk, and vanilla extract until the mixture is smooth. Then grab a spoon because this milkshake is thick and delicious.
