You Will Need

  • 3 c. cottage cheese
  • 1/4 tsp. lemon pepper
  • Assorted vegetables
  • 2 garlic cloves
  • 1/2 c. fresh basil
  • 1 tbsp. nonfat plain yogurt
  • 1 tbsp. olive oil
  • 1/4 c. freshly grated Parmesan cheese
  • Salt and pepper
  • 1/3 c. chopped onion
  • 1/4 c. plus 2 tbsp. unsalted butter, plus more for greasing
  • 3 eggs
  • 6 tbsp. all-purpose flour
  • Equipment:
  • Food processor

Steps

  1. Step 1

    Do a dip

Do a dip made of cottage cheese by combining 1/2 cup of the cottage cheese with the lemon pepper. Use any veggies you like as dippers.

  2. Step 2

    Make pesto

Make pesto with the cottage cheese. Put the garlic and basil in a food processor until everything is finely chopped. Add 1 cup of the cottage cheese, the yogurt, olive oil, Parmesan cheese, salt, and pepper and blend until the pesto is smooth and creamy. Use it as a pasta sauce or a spread for sandwiches.

  3. If you use it as a pasta sauce, dilute the pesto with a spoonful of the water you used to cook the pasta.

  4. Step 3

    Try a savory pancake

Try a savory pancake. Cook the onion, 1/8 teaspoon each of salt and pepper, and 2 tablespoons butter in a skillet over low heat until the onion is golden brown. Transfer everything from the pan to a bowl and add 1 1/2 cups of cottage cheese, the eggs, flour, 1/4 cup of butter, and salt and pepper to taste. Then whisk everything to combine.

  5. Step 4

    Cook the pancakes

Brush a nonstick skillet with butter and heat it over medium heat. Cook the pancakes by scooping 1/8 cup of the batter per pancake. Cook each side for one to two minutes, or until the sides are golden brown.

  6. Step 5

    Replace ricotta in lasagna

Try replacing the ricotta called for in your lasagna recipe with cottage cheese, for a healthier, lower-cost alternative. Enjoy!

  7. It takes 100 pounds of milk to make about 15 pounds of cottage cheese.
