never cut down the centre of the tail!!! the poop tract runs down the center of the tail and you'll spoil the meat!!! squeeze the sides together and then use scissors to cut down the inside of the tail. remove meat and peel back the thin length of meat on the posterior to expose poop tract and remove with thumb
