How to Make Watercress Soup

This low-calorie, creamy soup can help you shed those extra pounds and provide you with important vitamins and minerals.


  • Step 1: Rinse and prepare the watercress Lightly rinse and pat dry the watercress. Remove the stems and set it aside.
  • Step 2: Dice onion and potatoes Dice the onion and potatoes into small pieces.
  • TIP: Store onions in the fridge and run them under cold water before peeling to keep you from crying when you cut them.
  • Step 3: Boil onion and potatoes in chicken stock Combine the chicken stock, potatoes, and onions in the stock pot and season with salt and pepper to taste. Reduce the heat when the stock reaches a boil and simmer until the potatoes are soft.
  • Step 4: Add watercress, and cook for three minutes Add the watercress to the pot and allow the soup to simmer for an additional three minutes.
  • TIP: Extend the life of fresh watercress by putting the stems in a glass of water and covering it with a plastic bag. They will stay fresh for up to a week.
  • Step 5: Blend the soup to a puree Remove the pot from the heat and pour the soup into a blender. Puree the soup until it is a smooth liquid.
  • Step 6: Serve hot or cold Garnish with the yogurt and serve the soup hot or cold.

  • 3 bunches of watercress
  • 1 onion
  • 2 potatoes
  • 8 c. chicken stock
  • Salt
  • Pepper
  • Plain yogurt
  • A kitchen knife
  • A large stock pot
  • A blender
