Cottage cheese is delicious and packed with protein. But did you know you can incorporate it into all kinds of recipes to add texture and creaminess? Here are a few ideas to get you started.
Step 1: Do a dip Do a dip made of cottage cheese by combining 1/2 cup of the cottage cheese with the lemon pepper. Use any veggies you like as dippers.
Step 2: Make pesto Make pesto with the cottage cheese. Put the garlic and basil in a food processor until everything is finely chopped. Add 1 cup of the cottage cheese, the yogurt, olive oil, Parmesan cheese, salt, and pepper and blend until the pesto is smooth and creamy. Use it as a pasta sauce or a spread for sandwiches.
TIP: If you use it as a pasta sauce, dilute the pesto with a spoonful of the water you used to cook the pasta.
Step 3: Try a savory pancake Try a savory pancake. Cook the onion, 1/8 teaspoon each of salt and pepper, and 2 tablespoons butter in a skillet over low heat until the onion is golden brown. Transfer everything from the pan to a bowl and add 1 1/2 cups of cottage cheese, the eggs, flour, 1/4 cup of butter, and salt and pepper to taste. Then whisk everything to combine.
Step 4: Cook the pancakes Brush a nonstick skillet with butter and heat it over medium heat. Cook the pancakes by scooping 1/8 cup of the batter per pancake. Cook each side for one to two minutes, or until the sides are golden brown.
Step 5: Replace ricotta in lasagna Try replacing the ricotta called for in your lasagna recipe with cottage cheese, for a healthier, lower-cost alternative. Enjoy!
