I'm going to show you how to crumb coat your cake. So for this we have an eight inch cake. It's an eight inch square. We crumb coat so that the icing - you can use just about any butter cream recipe for your crumb coat. It's going to hold all your crumbs together, so that way when you go back and you add your fresh coating of icing you don't get any crumbs in it. So just going to apply a little bit across the top. The crumb coat can be very light, this way you don't pick up a lot of the icing when you back and add your fresh coat of icing. So you just want to apply just enough to cover your cake. And as you can see, it does exactly that, it collects all the crumbs. Once you put it in the fridge and let it set, it will be nice and firm. So when you put your second coat of icing it doesn't pick up any of these crumbs. We are going to add a little bit to the side as well. And again, it just needs to be a very thin coat of icing and as you can see it is picking up all of the crumbs. And when your done, you are going to want to wipe away any excess icing as well and you can use any offset spatula or straight spatula. And you are going to want to push in to the cake to get all of the excess. And this is your crumb coat. It's nice and even. And we will set this in the fridge for about 45 minutes and what that does is it will set the icing , it will be nice and firm so we can put on our fresh coat of icing.
