Beets are messy but they are a superfood too. The purple color of beets is what gives it its cancer-preventing properties. It also contains betaine and folate combined together work to prevent cardiovascular disease, stroke and dementia. One of the things that I like about beets is that you can also eat the beet greens at the top of the beet. You saute them and they super nutritious as well. There are lot of different ways to cook beets and what I do to keep from getting my hands purple is I put on a pair of rubber gloves and I chop the beet. And you can saute them, you can steam them, you can put them in a smoothie a lot of people like to juice them. So beets are definitely a superfood that you would want to add to your diet and you will add in a little purple color too.
