Another great thing you can do for lunch and very nutritious is kale salad. Kale salad, you just strip the kale off the stem and you massage it with a tiny bit of olive oil. Extra-virgin olive oil is a raw food. You'll see it change color. You'll see it get softer. And then you want to have a good dressing on there. You can make several different dressings that are great on kale salad. You can make a raw tahini. You just take raw sesame seeds, a cup of raw sesame seeds. Add two cups of water to it in a blender. Add a little bit of salt and puree it, and you've got raw tahini. And then to make it into a dressing you're going to add lemon juice and a little more salt. And that makes a great dressing. And then the red on here is just chopped tomatoes. And it's a very filling, satisfying, nutritious way to have lunch and not going to take you much time in the kitchen, so that's always a plus.
