If you want a really decadent raw dessert, this is one. This is SunCafe's Cookie Dough pie. We've actually won awards for this. One of the most common raw desserts is versions of cheesecake made out of raw food but, of course, dairy free and it's a layered dessert. There's three different layers. The first layer is very simple. It's just ground up pecans and that gives us our crust.
The second layer is the complex layer. That's the cookie dough layer. Cashews, agave, raw chocolate and chocolate chips, or they call them nibs, and you don't completely grind it up so you get that cookie dough effect of having it a little bit lumpy. And then, the top is just some chocolate gnash sauce to give it an effect and give it some more interest. Boy, I'll tell you, you take a couple of bites of that and you just can't believe you're eating raw.
It's like, you're going to feel like it's more decadent to be raw food as it is to eating traditional food. It's so good and so, it's going to be so good but, it's going to be way better for you than a traditional dessert where you just using white sugar and white flour. So try it sometime.
