How to Clean Mussels

So, what we're going to do is we're going to clean off some mussels. When you buy your mussels, they should have a little beard on them. Sometimes you're purveyor will actually clear those off for you. You really want to get your mussels from a really credible, good fish store. You don't want them frozen or anything like that. These things are best when they're just right out of the water for a couple of days.
What we're going to do is, we're just going to take a sponge or a brush and just kind of scrub off any dirt or sand that might be on there. Then just when you're storing them, make sure you put them on ice, a little bit of some cold water around it. And you can even soak them with a little bit of sea salt in water as well, just to keep them in their natural habitat and not just dump them in fresh water. Just a little bit of salt water would be fine.
So, we're just going to rinse them off real quick, get them nice and clean, and then we'll cook them up.
