So if you're watching me right now, you're probably wondering if you should go out and go buy all the gear for making pizza at home, but the honest to god truth is you can make a beautiful pizza with what you already have in your kitchen.
So, if you're going to make a pizza, it's not going to get as crispy as it would on a stone, but you can absolutely use something like this, just a cookie tray, right?
This, I would heat up in the oven really really hot. Get it in there for about 10 minutes, 500 degrees, so it's blaring with heat, give a little olive oil over the top, and use that as the base of your pizza. There's no way you're going to get the crust that a stone would impart, but it still gets you there, and you'll have a nice product in the end.
Similar to a stone, which I absolutely adore, is turning something like a cast-iron skillet upside-down and using the base here as your stone, so to speak. It transfers an immense amount of heat. I just leave this in the oven, and it really really punctures your crust, giving you that crunch that a stone or even a pizzeria can develop.
What I love about it is, you can leave it in the oven forever, you can cook a million different things on it, so a lodge upside-down works great, and definitely a little bit more superior to the cookie sheet, but, hey, if you don't have the stone, either option will work for you at home.
