Hi, I'm Katie Roseness, and today I'm going to show you how to take our Double Chocolate Snowcap Cookies and turn them into Hot Cocoa Cookies.
So I have my cold Snowcap Cookies here. You can see they have that nice layer of powdered sugar over the tops and it's a really dense chocolaty cookie. But to make it even more over the top, I'm just going to take some milk chocolate chips, put them right on top, and it really doesn't get any easier than this.
I like to do two, but you could do one, you could do four. As much chocolate as you like. And I'm going to top those off with marshmallows. Hence, our hot chocolate cookies. Because in the oven, the marshmallows toast, the chocolate melts, and when you break open the cookie, you get this really delicious gooey, chocolate marshmallow cookie.
So I don't necessarily want an entire marshmallow so I'm going to cut this into three. And each round is going to go right over the top of one cookie.
They're a little sticky, but they're yummy.
And if you could find flavored marshmallows in the store, that would be great too. You could even sprinkle cinnamon on top of this for a little extra holiday flair. I've got two more. Two big ones on these.
And these are going to go right into the oven on a really high temperature. I'm going to go at about 450 or 475 degrees until they just start to melt.
Oooh. So my cookies are done. They're nice and toasty. You can go lighter than this if you want but I like this kind of caramelized top to them. And I have just a bar of chocolate. I'm going to grate this over the top for a little extra hot cocoa-ness.
And let's see if we can break one of these open here. These are very hot and soft. But you can see if I open this up, the marshmallow is nice and squishy. And I get the molten chocolate. Whew. Very hot.
Molten milk chocolate right in the center. Toasted marshmallow on top. Just a mess of a delicious chocolate cookie.
